Roasted Garlic

If you’ve
never roasted garlic, you’ll love the marvelous mellow flavor that
develops in the oven. Roasted garlic can be used in a variety of
ways; sauces, dressings, mashed potatoes, in place or raw garlic or
just spread on crusty bread or crackers. The best part is it’s so
simple.
- Garlic bulbs
- Olive oil
- Salt and pepper
Preheat your oven to 375°F. Take
as many whole bulbs of garlic as you’d like and cut off the top of the
bulbs to expose the individual cloves. Place on a piece of
aluminum foil. Drizzle with olive oil. Sprinkle with salt
and/or pepper if desired. Close the foil around the bulbs and
bake 50-60 minutes depending on the size of the bulb. When done
the garlic will release a wonderful aroma and the cloves will be soft
when pressed. My advice is to cook a few bulbs at once.
Roasted garlic keeps well refrigerated for several days.
