Garlic Marinade for Lamb

This is an all purpose sauce that can be used as a marinade or sauce
for basting. Adjust the amount of garlic and mustard to
taste. I like more garlic and less mustard. This recipe
strides the middle ground. This is also a recipe where fresh
thyme is worth the investment.
- 3 cloves of roasted garlic
- ½ teaspoon salt
- 2 tablespoons Dijon mustard or another you may prefer
- 1 tablespoon soy sauce
- 2 teaspoons fresh rosemary
- 2 tablespoons lemon juice (fresh if possible)
- ¼ cup olive oil
Place the garlic and salt in a small bowl. Mash the salt into the
garlic. Add the remaining ingredients except the oil and mix
together well with a whisk. Slowly pour in the oil, whisking as
you pour. Add oil until you achieve a nice creamy consistency.
Use this marinade for the
lamb kabobs or as a coating on leg of
lamb. Brush on rack of lamb and coat with breadcrumbs before
roasting. Use a different combination of herbs to make a great
marinade for chicken or pork.
