Garlic Marinade for Lamb

Submitted by John Loveland

This is an all purpose sauce that can be used as a marinade or sauce for basting.  Adjust the amount of garlic and mustard to taste.  I like more garlic and less mustard.  This recipe strides the middle ground.  This is also a recipe where fresh thyme is worth the investment.

Place the garlic and salt in a small bowl.  Mash the salt into the garlic.  Add the remaining ingredients except the oil and mix together well with a whisk.  Slowly pour in the oil, whisking as you pour.  Add oil until you achieve a nice creamy consistency.

Use this marinade for the lamb kabobs or as a coating on leg of lamb.  Brush on rack of lamb and coat with breadcrumbs before roasting.  Use a different combination of herbs to make a great marinade for chicken or pork.
